My Favorite Bean Salad Recipe

I have one of my favorite recipes to share with you today.  This amazing bean salad is one of my favorite things to make because it is so easy and tasty, and only takes a few ingredients!  My son and I eat this up SO fast it's ridiculous.  I have my husband's uncle to thank for this recipe- he made it once when he was down from NYC and I just had to have the recipe!


It tastes great by itself as a salad, you can eat it with chips as a salsa, or add it on top of your tacos, taco salad, etc.  It tastes absolutely amazing no matter how you eat it!!  Give it a try, I promise you won't regret it.

Ingredients:
  • Can of black beans, rinsed and drained
  • Can of white beans, rinsed and drained
  • Package of grape seed or cherry tomatoes, washed
  • Bunch of cilantro, washed and chopped
  • Green onions, washed and chopped
  • Juice of 2 limes
  • Package of Italian dressing mix 

Rinse and drain the beans, and add to a medium-sized bowl.  Add the tomatoes, cilantro, green onions, lime juice, and Italian dressing mix.  Stir it all up with a wooden spoon, cover with a lid or foil, and refrigerate for at least an hour so all of the flavors can combine.  The longer you leave it in the fridge (within reason of course), the better it tastes.


Give it a try!  And try not to eat it all in one sitting ;)

  3. Do you need to add any liquid other than the lime juice to the dry Italian salad dressing mix? This sounds yummy!

    1. Nope, just the lime juice! When you let the salsa sit to allow the flavors to blend, it makes a little bit of liquid in the bottom, probably from the acid in the lime juice and Italian dressing mix mixing with the tomatoes and producing a little juice. Whatever it is, it tastes sooooo good and fresh, you should give it a try!
