So of course I had to pull out the molds and make something tasty with them. ;) The coolest part about these molds is the fact that my grandma, who lives in another state, gave them to me when I was around 12 or 13 years old. She gave me all of her sucker-making supplies because I was fascinated with the whole process of turning sugar and water (plus some color and flavoring) into delicious suckers.
For three years in jr. high my best friend and I made batches and batches of hard flavored suckers, and sold them to friends to earn money for the school Disneyland trip. That is until the vice principal shut us down. Then we had to go underground, and our suckers were even more popular!
So I found some cute chocolate rabbit molds in my stash that I knew would make perfect little cupcake toppers. If you've never made chocolate suckers or shapes, it is so ridiculously easy that I almost feel silly telling you to do it. I use the Wilton candy melts, because they are widely available, inexpensive, and easy to use. Just follow the directions on the back of the bag to melt as much chocolate as you think you'll need in the microwave. Follow the directions exactly, because if you burn the chocolate, it will not flow properly and be wasted. Also, be sure that you don't ever let any water, even a drop, touch the chocolate. It will seize up and get chunky and be worthless. Trust me. Keep water, even spoons that might be a little bit damp from washing, away from your chocolate.
To use those plastic chocolate molds, just give the inside a quick coat of cooking spray so that the chocolate is easy to remove. Pour the melted chocolate into the molds, then lightly tap of wiggle the plastic mold around to release the air bubbles. As the chocolate cools it will harden. Because I get impatient I like to speed up the process by placing the chocolate on a flat surface in the fridge or freezer for about 10-15 minutes.
Once the chocolate is completely cool, wiggle the mold around a little bit to release the chocolate, and pop out your cute rabbits (or whatever else it is that you're making)! See, wasn't that easy?
The mold that I used has chocolate bunnies and chocolate suckers, so I made both. I placed the chocolate bunnies right on top of frosted cupcakes to get them ready for Easter. I love the way they turned out!! My kids all called dibs on the suckers, so I shared.
